Fred Tschanz (1929–2012) was more than just a hotelier. He was a true Zurich original, a visionary, and a lifelong bon vivant. His story is that of a modern fairy tale: from washing dishes to becoming a defining figure of Zurich’s gastronomy scene.
Fred originally aspired to be a concert pianist. However, fate led him to the Lausanne Hotel School. He financed his studies himself through side jobs—the first testament to his indomitable work ethic.
After twelve years in the USA, Fred returned in 1962 brimming with ideas. He founded his gastronomy empire and, at one point, managed up to twelve different businesses. His motto remained ever optimistic:
After the rain comes the sun. After the weeping comes the laughter.

Fred was a connoisseur through and through. He dedicated himself with great devotion to hunting, art, and music. This passion for beauty lasted a lifetime: at over 80 years old, he opened his own art gallery and remained, until the very end, a charismatic host who shaped the Zurich way of life.
Since 2013, Fred’s granddaughter Stéphanie Portmann, alongside her husband Domenic Zembrod, has led the family business. With the same passion as Stéphanie’s grandfather, they cultivate Fred’s legacy and shape the Zurich hospitality industry with five businesses and around 100 employees:
